Recipes for Salsas We Served at Hudson Valley Seed Co.'s Tomato Fest

Peach Tomato Salsa       

Serves 8 - 10  

Ingredients

  • 3 diced roma tomatoes

  • 1 diced yellow bell pepper, seeded

  • 2 diced jalapenos, seeded

  • 1 small clove garlic

  • 1 small yellow onion, chopped

  • 3 large white peaches, sliced (optional: grill peach slices with a sprinkle of brown sugar.)

  • 1 small bunch parsley or cilantro

  • 2 to 3 Tbsp lime juice

  • Salt and pepper to taste

Preparation

In a food processor, pulse peppers, garlic, onion, and parsley until finely chopped and add to a bowl. Process the peaches and tomato and add to bowl. Add lime juice, salt, and pepper.

Mix well, taste, and make it your own!

Spicy Tomato Salsa

Serves 6 - 8

Ingredients

  • 5 to 7 diced roma tomatoes

  • 1/4 white onion, chopped

  • 2 diced jalapenos

  • 1 clove garlic

  • 1 bunch scallions

  • 2 to 3 Tbsp lime juice

  • 1 Tsp dried oregano

  • 1 Tbsp habanero hot sauce

  • Salt and pepper to taste

Preparation

In a food processor, pulse peppers, garlic, onion, and scallions until finely chopped and add to a bowl. Process the tomatoes and add to bowl. Add lime juice, oregano, hot sauce, salt, and pepper.

Mix well, taste, and make it your own!
