Peach Tomato Salsa
Serves 8 - 10
Ingredients
3 diced roma tomatoes
1 diced yellow bell pepper, seeded
2 diced jalapenos, seeded
1 small clove garlic
1 small yellow onion, chopped
3 large white peaches, sliced (optional: grill peach slices with a sprinkle of brown sugar.)
1 small bunch parsley or cilantro
2 to 3 Tbsp lime juice
Salt and pepper to taste
Preparation
In a food processor, pulse peppers, garlic, onion, and parsley until finely chopped and add to a bowl. Process the peaches and tomato and add to bowl. Add lime juice, salt, and pepper.
Mix well, taste, and make it your own!
Spicy Tomato Salsa
Serves 6 - 8
Ingredients
5 to 7 diced roma tomatoes
1/4 white onion, chopped
2 diced jalapenos
1 clove garlic
1 bunch scallions
2 to 3 Tbsp lime juice
1 Tsp dried oregano
1 Tbsp habanero hot sauce
Salt and pepper to taste
Preparation
In a food processor, pulse peppers, garlic, onion, and scallions until finely chopped and add to a bowl. Process the tomatoes and add to bowl. Add lime juice, oregano, hot sauce, salt, and pepper.
Mix well, taste, and make it your own!
